We believe food is one of the most powerful ways to express identity.

At Kaldero, it sits alongside other forms of personal expression that are also core to what we do, with music, art, writing.

Our aim is for Kaldero to feel like a cohesive, creatively led space.
Everyone involved brings something to it; through the food, yes, but also through the artwork, the music, and the atmosphere on the floor, shaped by a warm, intentional team.

We want people to feel fully welcomed and maybe, in that space, have a moment to think about how food and identity do or don’t connect in their own lives. We want to get people thinking, talking and the best way we know how, is telling our stories through the flavours we bring that remind us of places we’ve been, people we miss and memories that’ve shaped us.

Richie Castillo and Alex O’Neill are the team behind Bahay, the Irish-Filipino food project launched in 2021. Known for its flavour-led pop-ups, large-scale festival events, cookbook and media appearances, Bahay has become one of the most recognisable voices in contemporary Irish food culture. Their work has been featured in Condé Nast Traveller, National Geographic, The Observer, South China Morning Post, with endorsements from chefs including Nigella Lawson and Jamie Oliver. Bahay are regular food contributors for Channel 4’s Sunday Brunch.
